Your Sesame Upgrade: You Decide

For the classic look: Use hulled sesame seeds. They are bright white, toast faster, and look like the American original.

*Instructions: DIY Dried Lemon Zest

You’ll need 4–5 organic lemons (untreated/unwaxed). Wash them thoroughly with hot water and dry them very well. Use a fine grater (e.g., Microplane). Important: Only grate the thin yellow layer. The white pith tastes bitter and will ruin your spice mix.The zest will be moist. It must become completely dry (“bone dry”) so it doesn’t mold in the jar. Spread the zest flat on baking paper. Preheat the oven to 50°C (fan setting). Place a wooden spoon in the oven door to allow moisture to escape and let it dry for 1–2 hours. To test, rub a little zest between your fingers. It should feel hard and crumble easily. Let everything cool completely.
